This coffee is from the Harsu Sala washing station in the Uraga region of Guji, one of the most famous coffee-growing regions of Ethiopia.
Coffees are delivered in cherry form by about 750–800 active farmers in the surrounding area, each of whom grows coffee alongside other household and commercial crops on 1.5–2.5 hectares of land. After the delivery, the coffee is sorted, and then depulped the same day. It’s fermented underwater for 24–48 hours depending on the weather, and washed once before being spread on raised beds to dry. Drying these washed coffees takes 10–12 days.
