At Black Matter Coffee Roasters, we live for the search for the perfect coffee. So when our Chief Roaster Tristan got the opportunity to fly to Melbourne for a one day intensive with Master Roastress Anne Cooper, AKA Roastress Coops, he was off like a shot.
If you haven’t heard of Anne, she’s an award winning Roastress, specialty coffee roast profiling and production expert, certified cupper, QC and judge, and ASCA and USBC competitor. She’s been Head Roaster at such coffee institutions as Proud Mary Coffee and Axil Coffee Roasters in Melbourne, and Dallis Bros Coffee in New York. She now works as an independent consultant, imparting her vast knowledge to eager coffee professionals across Australia and the USA.
Tristan and Anne spent the day in the very cool roasting education space Maillard Atelier, where they roasted and cupped the new range of Brazilian coffees from Minas Hill Coffee. The afternoon was all about profiles – spent discussing data and technical elements impacting on coffee taste, quality and consistency. Systems and processes for quality assurance were the topics of the day.
Tristan said it was an incredibly valuable trip, and he couldn’t wait to try out some new tricks with the timing of heat application during the roast.
